When lockdown was announced in the UK, I found myself reminiscing about a trip to New York my cousin Ollie and I took to promote our restaurant Carousel.

The core concept of the Carousel restaurant is to invite chefs from all over the world to come and collaborate with our team, bringing their style, their flavours and their menu to our audience. This time it was us who were doing the travelling and we went out to cook at Colonia Verde in Brooklyn with Felipe and his team.

A mad week meeting developing loads of relationships and a sell out at the restaurant, it left memories to be cherished and a hope that we’ll be able to live out similar times again soon.
